The good folks at MothersClick – who, not so long ago hosted a live-chat with me about The Book – are holding a contest for the best recipes for quick, healthy meals that can be made with your kiddos. (I’m assuming this means pouring milk into cereal and putting frozen waffles into the toaster oven don’t count.)
By going to their web site for “Cookbook for Moms,” MothersClick is accepting recipes through April 16. Online readers will vote for their favorites and the lucky entries will be published in a hardcover cookbook. All proceeds from the book sales will be donated to the Boys and Girls Clubs of America.
If I were going to enter the recipe contest, I think I’d contribute an improvised recipe from my sister-in-law Lisa who once told me how she makes these really great beef empanadas. They’re easy to prepare. The kids have helped me make them in the past with minimal bickering. (They loved folding the dough and sealing the edges together with a fork.) And two out of three of my offspring will actually eat the empanadas. As for the healthy part . . . well . . . did I mention that two out of my three kids will eat ‘em?
